PETITE SWISS QUICHES 
1 c. flour
1/4 tsp. salt
1/3 c. butter
3 to 4 tbsp. cold water
1 c. shredded Swiss cheese
1 tbsp. flour
1/2 c. half and half
1 egg, beaten
1/4 tsp. salt
Dash of pepper
4 crisply cooked bacon slices, crumbled

Combine flour, salt; cut in butter until mixture resembles coarse crumbs. Sprinkle with cold water while mixing with a fork. Form into a ball; divide dough into 24 balls, press each onto bottom and sides of miniature muffin pans.

Toss cheese with flour. Add combined half and half, egg and seasonings; mix well. Stir in bacon. Fill each cup approximately two-thirds full. Bake 325 degrees 30 to 35 minutes or until lightly browned. Makes 2 dozen.
