APPLE UPSIDE DOWN CAKE 
2 tbsp. butter
1/2 c. brown sugar
1/2 c. chopped pecans
3 med. cooking apples, peeled & sliced
2 tbsp. lemon juice
1/2 c. (1 stick) butter
2/3 c. brown sugar
Whipped cream
1 egg
1/2 tsp. vanilla
2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. buttermilk
1/3 c. sugar

In a 9 x 9 x 2 inch pan, melt 2 tablespoons butter. Spread 1/2 cup brown sugar in bottom of pan. Sprinkle with pecans, arrange apple slices on top, cover with lemon juice and set aside. Cream together 1/2 cup butter and remaining sugars until fluffy and light. Beat in egg and vanilla thoroughly. Sift together remaining dry ingredients. Add alternately with buttermilk. Spread batter over apple slices in pan. Bake at 325 degrees for 60 minutes or until done. Place on cooling rack 10 minutes then turn upside down on plate. Serve warm. Top with whipped cream.
