MIXED VEGETABLE CASSEROLE 
2 (15 1/4 oz.) cans mixed vegetables
1 can water chestnuts, cut up
2/3 c. mayonnaise
1 c. cheese, shredded
1 roll Ritz crackers
2 tbsp. butter

Mix first 4 ingredients. Crumble crackers into a bowl and pour butter over crackers. Mix well. Spoon vegetable mixture into 9x12 casserole dish. Sprinkle butter and cracker mixture on top. Bake at 325 degrees to 350 degrees for about 20 minutes. Even non-vegetable lovers like this dish!
