TURKEY MELT 
4 c. cubed lean turkey breast
1 pkg. frozen mixed vegetables
1/2 c. shredded cheese (Angle Lace Swiss or Monterey Jack)
Seasoned pepper and salt to taste
1 pkg. white rice

Microwave vegetables according to package directions. Season turkey and broil until done. Prepare rice according to package directions. Pour rice into covered baking dish. Gently mix turkey and vegetables together. Pour over rice in baking dish. Sprinkle cheese over mixture; cover and heat in oven until cheese melts.

Since microwave ovens vary in power, you may need to adjust your cooking time.
