DUNGENESS CRAB & ORANGE SALAD 
6-8 oz. crabmeat (and/or shrimp)
1 1/2 c. cooked, chilled rice
3/4 c. mayonnaise
1/4 c. sliced green onion
1 tbsp. lemon juice
1 tbsp. honey
1/4 tsp. ginger
1/4 tsp. salt
1 (11 oz.) can mandarin orange sections, drained
1 c. sliced celery
Salad greens
Avocado

Combine rice, mayonnaise, green onion, lemon juice, honey, ginger and salt. Mix and chill 1 hour. Fold in crab, celery and orange sections. Serve immediately with salad greens and avocado slices.
