RHUBARB PIE 
1 (9 inch) unbaked pie shell
3 c. cut diced (not peeled) rhubarb
2 eggs, beaten
2 c. white sugar
3 tbsp. flour
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 stick butter

Pour the eggs, sugar, flour and salt mixture over the cut rhubarb and let stand for 15 minutes stirring two times. Pour into unbaked pie shell. Dot top of pie with butter and sprinkle nutmeg. Bake at 400 degrees for 30 minutes. Reduce heat to 350 degrees for 30 minutes more.
