IRISH POTATO CAKE 
1 c. butter
2 c. sugar
2 c. mashed potatoes
1 tsp. vanilla
1 tsp. lemon extract
1 tsp. cloves (ground)
1 tsp. allspice
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. milk
2 c. flour
2 tsp. baking soda
1/2 c. cocoa
4 eggs, well beaten
1 c. chopped nuts
1 c. raisins

(Save 1/4 cup of flour - put over nuts and raisins).

Cream butter and sugar. Add potatoes, extracts and spices and mix well. Add milk. Combine flour, soda and cocoa, add to creamed mixture, add eggs (now add nuts and raisins with flour). Mix well. Bake at 350 degrees for 1 hour and 30 minutes until done.

CARAMEL ICING:

2 c. brown sugar
1/2 c. cream
1 stick butter
1/2 tsp. vanilla

Boil 3 to 5 minutes. Add confectioners' sugar slowly until thick.
