PIMENTO CHEESE 
2 raw eggs, (scramble lightly)
1 tbsp. sugar
2 tbsp. vinegar

Add 2 lbs. Velveeta cheese to above (chop Velveeta cheese). Stir until creamed. Boil 2 eggs. 1 can pimento, chopped. Chop 3 large sour pickles (fine). Add eggs, pickles, pimento to scramble mixture. Add 3 tbsp. mayonnaise and vinegar or pickle juice to taste. Makes 3 pints.
