SALMON WITH RED WINE 
2-3 lb. whole salmon
1 tsp. salt
1/4 tsp. white pepper
3 strips bacon
1 lemon, cut in half
1/2 c. red wine
2 tsp. all-purpose flour
2 tsp. water
4 tbsp. melted butter
Parsley for garnish

Scale and clean salmon. Season with salt and pepper. Place in baking dish and arrange bacon strips around fish. Bake for 30 minutes at 350 degrees. Sprinkle the juice from one half of the lemon over the fish and add wine. Bake for another 30 minutes.

Disperse flour in 2 teaspoons water. In a small pan, heat flour-water mixture with butter, stirring until thickened. Pour over fish. Garnish with parsley and slices of the remaining lemon half.
