BEEF ROLLS | |
1 1/2 lbs. round steak 1 clove garlic, chopped 1 tsp. Parmesan cheese, grated 1 egg, hard-boiled and chopped 1/2 tsp. chopped parsley 2 slices bacon, cooked and chopped 1/2 tsp. salt 1/8 tsp. pepper 1/4 c. olive oil 1 sm. onion, chopped 2 1/2 c. canned tomatoes 1/2 tsp. salt 1/8 tsp. pepper 1 bay leaf Cover steak with garlic, cheese, egg, parsley, bacon, 1/2 teaspoon salt, 1/8 teaspoon pepper. Roll up steak to enclose mixture and tie securely, roll so that when steak is sliced jelly-roll style, steak will be cut against the grain. Brown onion in oil, then add steak, browning on all sides. Add tomatoes, remaining spices and simmer for 1 1/2 hours. May add 1/2 cup dry red wine and a few grains of nutmeg if desired. Slice meat prior to serving. Serves 4 to 5. |
