APRICOT COFFEE CAKE 
1 c. sugar
4 eggs
1 c. oil, corn
2 c. flour
1 tsp. baking powder
1 can apricot pie mix for filling
Sugar and cinnamon mix for cake top

Beat eggs before adding sugar. Add ingredients as listed. Do not add the pie mix until after you have 1/2 of the dough in pan (9 x 13). Carefully spoon the pie mix to cover area. Spoon other 1/2 dough to cover pie mix. Top with cinnamon-sugar. Bake at 350 degrees for 30 minutes.
