CAULIFLOWER AU GRATIN 
1 cauliflower, washed & trimmed
10 oz. butter
1 oz. flour
1/2 pt. milk
4 oz. cheddar cheese, finely grated
Salt & freshly ground black pepper
10 oz. fresh ground bread crumbs

Cooking time: 25 to 30 minutes. Cook the cauliflower in boiling, salted water for 10 minutes. Drain and place in an ovenproof dish. Melt the butter, add the flour and cook for a few minutes. Allow to cool slightly before adding the milk gradually. Bring to a boil.

Stir in 75g (3 ounces) grated cheese and season well. Pour over the cauliflower. Mix the remaining cheese and bread crumbs together and sprinkle over the cauliflower. Brown under hot grill. Serve with bacon rolls.
