MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. Karo white corn syrup
1 c. roasted salted peanuts, can use dry roasted cashews, almonds, pecans
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Grease cookie sheet. In 1 1/2 quart bowl, stir together sugar and syrup. Microwave 4 minutes on high, stir in peanuts. Microwave 3 minutes on high. Stir in butter and vanilla. Microwave 2 minutes on high. Stir in baking soda and gently stir until light and foamy.

Pour mixture onto lightly greased cookie sheet. Spread with back of spoon. Cool 1/2 hour. Break into pieces and store in airtight container. Makes 1 pound. Great for Christmas giving!

Since microwave ovens vary in power, you may need to adjust your cooking time.
