EMILIE'S RHUBARB PUDDING 
3 c. rhubarb
1 egg, beaten
3/4 c. white sugar
2 tbsp. flour
1/4 c. butter
1/2 c. brown sugar
2/3 c. flour

Mix rhubarb (cut in 1/2-inch pieces) with beaten egg. Add sugar and flour. Sprinkle crumb topping of butter, brown sugar and flour on top. Bake in shallow, greased, glass baking dish for 30 minutes in 350 degree oven. Serve warm.
