SHRIMP ALFREDO | |
This is a mock version of the stuff they put on the food bar at our local pizza place minus the shrimp. They did not give me the recipe - this is just my version and I added shrimp to it. I hope you enjoy it! My family absolutely loves it! You can omit the shrimp and it is equally as good! 1 (1 lb.) box spaghetti (I'm a diabetic so I use the whole-wheat version) 1 medium purple onion 2 tbsp. butter 1 tbsp. minced garlic (about 3 large cloves) 1 jar Alfredo sauce (which ever brand you like) 1 (4 oz.) can sliced mushrooms, drained 1 small bag precooked peeled and deveined shrimp 2 tbsp. olive oil 1 pinch pepper flakes for a little heat (optional) 1 cup shredded Parmesan cheese (I buy the already shredded kind) a small amount of chopped parsley, for garnish (optional) While your spaghetti is boiling slice up the onion. I have found the best way to do this is cut the onion in half then turn it on the its side and slice long ways into two pieces then cutting the other direction cut the onion into 1/4-inch slices or you can just dice it up (its up to you). On medium heat melt your butter in a small (I used cast iron) saucepan. Sauté the onion and minced garlic just until the onion is softened a little. Add the Alfredo sauce directly to the pan with the heat turned to medium-low along with the mushrooms and the shrimp. Heat until everything is warmed through. When the spaghetti is al dente strain it well and add the olive oil and toss to coat. Once the sauce mixture has heated through pour it over the noodles. Add pepper flakes, if desired, and toss to evenly coat until everything is incorporated. Serve with grated Parmesan cheese and a sprinkle of the chopped parsley on top (garlic bread makes a great side with this dish). Submitted by: MacsGirl |
