BROCCOLI CASSEROLE 
2 pkg. (10 oz.) frozen chopped broccoli, thawed
1 can cream of mushroom soup
8 sq. slices Colby cheese (may sub. Velveeta)
1 lg. can mushroom pieces
1 pkg. stuffing mix (Stove Top, Pepperidge Farm, etc.)
2/3 c. water
1 tbsp. butter

Spread 1 package of uncooked thawed broccoli over the bottom of a rectangular casserole. Next layer 1/2 the ingredients: Cheese, mushroom soup and mushrooms. Spread second package of broccoli and layer last half of ingredients. Warm water and butter in a saucepan, and add 2/3 package of stuffing mix to moisten. Spread over top of layered ingredients. Bake at 350 degrees for 45 minutes. Serves 6-8.
