1/3 c. Jalapeno cheese, grated, OR Monterey jack for less spicy dip
2 1/2 c. sharp Cheddar, grated
3/4 c. mayonnaise
1 sm. onion, chopped

Mix ingredients. Bake at 350 degrees for 20 minutes. Blot top with paper towel. Great with Ritz crackers.
