1 pkg. O'Brien Ore Ida frozen potatoes
1 stick butter
2 c. cheddar cheese, grated
1 doz. eggs, beaten
2 c. milk
(Ham, bacon or mushrooms (optional)

Saute potatoes in butter until thawed about 5 to 7 minutes. Beat eggs into milk. In a 9 x 13 pan put sauteed potatoes and ham, bacon or mushrooms and then add eggs and top with cheese. Bake at 350 degrees for 45 minutes. Serve for brunch or lunch.
