FISH STUFFED WITH SCALLOPS 
1 1/2 lbs. fish (scrod or cod)
Cheese sauce - med. thick cheddar cheese sauce or plain cream sauce - med. thick

TO MAKE SAUCE:

2 tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper

Blend until smooth over low heat, when bubbly add 1 cup milk, bring to a boil. Boil 1 minute, for cheese sauce add 1/2 cup chopped cheddar cheese. Place a layer of fish, a layer of scallops and another layer of fish in an oblong pan.

TOPPING:

1 roll crushed Ritz crackers
1/2 c. butter

1 1/2 tbsp. white vinegar
Onion powder to taste
Seasoned salt to taste
Pepper to taste
Lemon to taste
1/4 tsp. dry mustard
1 or 2 drops red hot sauce (optional)

Bake at 375 degrees for 30 to 40 minutes.
