LENTIL-RICE LOAF 
2 c. cooked and mashed lentils
1 c. cooked brown rice
1 c. skim milk
1/2 c. enriched bread crumbs
1 tbsp. corn oil
1 tbsp. powdered vegetable broth
2 tbsp. minced onion

Mix all ingredients well. Place in a greased meatloaf or bread pan. Bake at 350 degrees for 45 minutes. Tomato sauce, steak sauce, or a similar condiment may be used for extra flavor. Serves 4.
