APPLE BUTTER | |
10-12 lbs. apples 1 gal. sweet cider 6 c. sugar 1 tbsp. cinnamon 1/2 tbsp. cloves Wash and quarter apples. Add cider and cook until soft then run through a food mill. Drain off juice using a jelly bag or colander lined with cheesecloth. Combine apple pulp, sugar and spices. Bake in a 300 degree oven until thick. Test by placing a spoonful on a plate and if no juice forms around the pulp it is ready. Pour while hot into jars and process 15 minutes in a boiling water bath or freeze. Other types of fruit may be substituted for the apples such as plums, peaches, pears or combinations of fruit. |
