SARA'S PRALINE SWEET POTATOES | |
3 c. cooked and mashed potatoes (fresh sweet potatoes) 1 c. sugar 1 tsp. vanilla 2 eggs, beaten 1/2 to 1 c. milk (depending on consistency of potatoes) 4 tbsp. butter, melted Preheat oven to 325°F. In a large bowl, mix sweet potatoes, sugar, vanilla, eggs, milk and butter. In a greased 9 x 13 x 2-inch baking dish, place the sweet potato mixture. Topping: 1/2 to 1 c. chopped pecans 1/2 c. flour 4 tbsp. butter 1/2 c. brown sugar In a bowl, mix the pecans, flour, butter and brown sugar. Sprinkle over sweet potatoes. Bake for 35 minutes. Yields 6 to 8 servings. |
