LENTIL AND BROWN RICE CASSEROLE 
2 c. lentils, cooked
2 c. brown rice, cooked
1 onion, diced
2 tbsp. oil
2 c. plain yogurt
1/2 tsp. oregano
1/2 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. chili powder
1/8 to 1/4 tsp. cayenne pepper
1 c. Cheddar or Monterey Jack cheese, shredded

In a heavy skillet, heat the oil and sauté the onions. Add all remaining ingredients except cheese. Mix well and pour into greased casserole dish. Sprinkle cheese on top.

Bake at 375°F for 30 minutes.
