UNUSUAL CUCUMBER SLAW | |
1 lg. cucumber, diced 1 tsp. salt 1 tbsp. vinegar 1 c. milk 4 to 5 Irish potatoes, cooked 1 tbsp. butter Peel and dice cucumber, sprinkle on 1 teaspoon salt; let stand while you do rest of recipe. Add 1 tablespoon vinegar to 1 cup milk and let stand also. Peel and dice potatoes, cook in water until tender. Pour off all water. Add the cucumbers, being careful not to get any of the liquid that has accumulated on them, and the butter, stir until butter melts and cucumbers have changed color. Pour in milk, return to heat only until heated through. Add salt and pepper to taste. Note: Best when made with fresh homegrown cucumbers. |
