MINESTRONE SOUP 
1 c. dried kidney beans
6 c. water
2 c. broth
1 lg. chopped onion
3 diced carrots
3 chopped stalks of celery
1 c. diced raw potato
2 tbsp. olive oil
1/2 c. uncooked macaroni
1 c. chopped tomatoes
1 tsp. salt
Pepper to taste

Place beans in water, cook 3-4 hours. Saute vegetables (not tomatoes) in oil. Add to beans, cook 30 minutes. Add macaroni, seasonings and tomatoes. Simmer for additional 15-30 minutes.
