MEXI-CORN LASAGNA 
12 corn tortillas
1 (15 oz.) can corn
1 lb. ground beef
1 (15 oz.) can tomato sauce
1 1/2 tbsp. chili powder
1 tsp. cumin
1/2 tsp. oregano
1 (16 oz.) container low fat cottage cheese
Shredded cheddar cheese

Brown ground beef and drain. Add corn, tomato sauce, chili powder, oregano and cumin. Heat tortillas (6) and spread them in bottom of 13"x9"x2" greased pan. Pour half of tomato beef mixture over tortillas and then spread cottage cheese over this. Heat 6 remaining tortillas and spread them on top overlapping them. Pour remaining beef mixture over top and sprinkle with cheddar cheese. Heat in 425 degree oven for 25 to 30 minutes until cheese is melted and heated through. A microwave works best to heat tortillas.

Since microwave ovens vary in power, you may need to adjust your cooking time.
