MAFALDE A QUATTRO FORMAGGI | |
8 oz. pkg. mafalde (or fettuccine) noodles, cooked 3 tbsp. butter 1 1/2 tbsp. flour 1/8 tsp. ground nutmeg 1/8 tsp. white pepper 1 tsp. onion powder 1 c. light cream 1/2 c. chicken broth 1/3 c. shredded fontina 1/3 c. Bel Paese 1/3 c. crumbled gorgonzola cheese 1/2 c. grated Parmesan cheese Melt 1 1/2 tablespoons butter. Add flour, nutmeg, pepper, onion powder and cook, stirring constantly until bubbly. Remove pan from heat and add cream and broth. Return to heat and cook, stirring, until it boils and thickens. Mix in fontina, Bel Paese and Gorgonzola cheeses; cook, stirring until blended. Toss hot noodles with remaining butter and Parmesan cheese. Place noodles onto serving plates, top with hot cheese sauce and sprinkle with additional Parmesan. Serve immediately. Serves 4-6. |
