STUFFED ZUCCHINI SQUASH | |
3 med. zucchini 1 c. bread crumbs 1/4 c. Parmesan cheese 1/3 onion, chopped 1 tbsp. parsley 1/4 tsp. salt 1 egg 1 tbsp. butter (butter) Pepper to taste Wash zucchini; cut ends off, boil in salted water 5 minutes. Halve lengthwise, remove pulp with spoon. Combine pulp with bread crumbs, Parmesan cheese, onion, parsley, salt, pepper, and egg. Fill zucchini shells, dot top with butter. Sprinkle with additional Parmesan if desired. Bake in 350 degree oven for 30 minutes. |
