LOIS' STUFFED ZUCCHINI SQUASH | |
Wash good medium-size squash and snip ends (about 4). Boil whole or cut and boil squash. Scoop out centers almost down to skin. (Set to one side.) Brown 1 pound hot Italian sausage and onion in olive oil or regular oil. Mix scored out squash with 1 1/2 to 2 cups herbal stuffing mix. Add drained hot sausage. Mix: Salt Pepper Parmesan cheese Paprika Mix together and put this back into squash skins. Top with grated Mozzarella cheese or cheddar. Bake 1/2 hour at 350 degrees. |
