TABBOULEH 
1 c. med. bulgar (cracked wheat)
1 lg. bunch parsley
2 whole fresh tomatoes
1 bunch scallions, greens only
1 tbsp. fresh mint
4 tbsp. lemon juice
1/2 c. corn oil
Pinch cinnamon
Salt & pepper to taste

Soak bulgar 1 hour in cool water. Drain off excess water. Finely chop parsley, mint, tomatoes and scallions. Mix all ingredients together well. Chill.
