ORANGE-GLAZED PEA PODS 
8 oz. fresh pea pods
2 tsp. sugar
3/4 tsp. cornstarch
Dash of salt
1/4 c. orange juice
1/2 tsp. grated orange rind
2 tsp. unsalted butter
1/2 c. sliced almonds, toasted

Cook peas in a small amount of water in saucepan until tender-crisp; drain. Combine sugar, cornstarch and salt in double boiler. Add orange juice, blending until smooth. Add orange rind. Cook until mixture begins to thicken, stirring constantly. Stir in butter until melted. Spoon over peas in serving dish; sprinkle with almonds. Yield: 4 servings.
