APRICOT CHEESE DELIGHT 
1 (29 oz.) can apricots, drained and finely cut
1 (29 oz.) can crushed pineapple, drained
2 pkgs. (sm. or 1 lg.) orange Jello
2 c. hot water
1 c. combined pineapple and apricot juice
1 c. mini marshmallows (if desired)

Chill.

TOPPING:

1/2 c. sugar
3 tbsp. flour
1 egg, slightly beaten
1 c. combined pineapple and apricot juices

Thicken over low heat. Add 2 tbsp. butter and cool. Fold in 1 cup Cool Whip. Spread over gelatin layer which has completely set. Sprinkle with 3/4 cup grated cheese. Serves 10-12.
