SALAD - NICOISE 
Potatoes
Light Italian dressing (pkg.)
Red leaf lettuce
Black olives
Hard boiled eggs
String beans
Albacore tuna

Cube potatoes with skin on. Cook until tender - drain. Place on cookie sheet. Pour 3/4 of dressing while warm. Stir, cool, then refrigerate. Blanch string beans, refrigerate.

Serve on bed of lettuce. Garnish with black olives, beans, hard boiled eggs, split or sliced. Add tuna to top. Add more dressing (optional).
