MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. white sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can Thank You pie filling (cherry, peach, blueberry, etc.)

Put liners in cupcake pans. Place vanilla wafer in bottom. Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill 3/4 full. Bake at 375 degrees 15 to 20 minutes, until set. Top with a little filling. Cool.
