TEXAS TACOS 
2 lb. ground beef
3 med. potatoes, diced
2 med. tomatoes, chopped
1/2 head lettuce, chopped
4 oz. grated cheddar cheese
10 corn tortillas
1 c. veg. oil and 1 (8 oz.) jar picante sauce

Brown ground beef (do not drain). Then add diced potatoes and cook on medium heat for 25 minutes or until potatoes are done. Heat oil in skillet on medium heat. Dip tortilla in oil until soft. Lay tortilla in oil until soft. Lay tortilla flat on serving plate and add meat and potato mixture, lettuce, tomatoes, cheese and picante sauce. Fold tortilla over and line up tacos across plate and serve.
