NO BAKE OATMEAL COOKIES 
2 c. sugar
3/4 c. butter
2/3 c. (5 oz.) evaporated milk
3 tbsp. heaping instant butterscotch or chocolate pudding mix
1 tsp. vanilla
3 1/2 c. oatmeal

Bring sugar, butter and evaporated milk to a rolling boil, remove from heat. Add instant pudding, stirring well. Add vanilla and oatmeal, stirring well.

Drop by teaspoons onto wax paper. It won't drop so flat if left in pan awhile before dropping. Nuts and/or coconut may be added if desired.
