DATE BARS (HOLIDAY FAVORITE) | |
3 eggs 1 c. granulated sugar, sifted 2 c. chopped dates 1 c. broken or chopped walnuts 1 c. minus 2 tbsp. flour 1 tsp. baking powder 1/8 tsp. salt 1 tsp. vanilla Preheat oven to 325 degrees. Beat eggs until light and fluffy; add sugar slowly. (I sift the sugar into the beaten eggs.) After blended, fold in dates and nuts. Sift together flour, baking powder and salt. Add to batter; mix and add vanilla. Beat until blended. Line bottom of 9"x13" pan with buttered wax paper before pouring in dough. Spread evenly. Bake in 325 degree oven for 30 minutes. Cool completely. Cut into 1 1/2" squares and roll each square in powdered sugar. Store in air tight container: if properly stored, the cookie bars will stay soft and fresh for a long time. Thus, they can be made a week or more before the holidays. |
