CASSAVA CAKE 
1 pkg. Cassava, shredded
1 (12 oz.) mutant coconut, shredded
1 c. milk
1 egg
1 c. condensed milk

Preheat oven for 5 minutes at 375 degrees. Mix Cassava and mutant coconut with 1 cup of milk. (8 x 10 inch pan). Bake the mixture for 30 to 35 minutes. Take it out from the oven. Beat 1 egg with 1 cup of condensed milk. Pour it evenly on top of the baked Cassava. Put the mixture back in the oven and bake it again for 20 minutes. Let it cool, then slice as desired.

I've made this frequently. Problem is it always disappears. I recently got a comment from a culinary relative of mine who enjoyed this.

Tips: Defrost frozen cassava for about 45 mins-1 hr (so it's not a brick). Also, cook until slightly brown but not burnt. You can double the recipe and fit it in a 9x13 inch pan.

Tip: For those having trouble finding mutant coconut, look at an Asian grocery store. Also, you may find it under the name "Sweet Macapuno Strings."
