CARROT CAKE | |
2 c. brown sugar 3 c. whole wheat flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped nuts 1/2 c. raisins 1/2 c. chopped dates 1/2 c. coconut 1 tsp. cinnamon 1 c. oil 4 eggs, beaten 3 c. grated carrot 1 c. chopped bananas 1 c. crushed pineapple Combine dry ingredients and mix. Add remaining ingredients. Pour mixture into 2 (8 x 8 inch) pans, greased and lined. Bake at 350 degrees for 1 to 1 1/2 hours. FROSTING: 1/2 c. brown sugar 8 oz. cream cheese Whip together and spread over cooled cake. |
