MUSTARD GLAZED CARROTS 
2 lbs. carrots, pared & thinly sliced
1/2 tsp. salt
3 tbsp. real butter
3 tbsp. Dijon-style mustard
3 tbsp. brown sugar
1/3 c. minced fresh parsley

Simmer carrots in 1/3 cup water until crisp, tender, taking care not to burn. Drain any remaining water. Mix together remaining ingredients, except parsley; pour over carrots and simmer on low for 8 minutes. Place in serving dish and sprinkle with parsley. Serves 6 to 8.
