SOUTHERN COCONUT PIE 
1 unbaked pie shell (9")
1 c. sugar
3/4 c. light corn syrup
1/2 c. butter
3 eggs, beaten
1 3/4 c. coconut
1 tsp. vanilla extract
1/8 tsp. salt

Blend sugar, syrup and butter in saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Blend hot mixture slowly into beaten eggs. Stir in coconut, vanilla and salt. Pour into pie shell. Bake at 375 degrees for 30 minutes.

Note - variation: In lieu of coconut add 1 3/4 cups pecans. You have Pecan Pie.
