ZUCCHINI BREAD | |
Mix in a bowl: 3 eggs, beaten 3/4 c. oil 2 c. sugar 2 tsp. vanilla 1 1/2 tsp. cinnamon Add to above and mix thoroughly: 2 c. grated zucchini 1 (8 oz.) can crushed pineapple, drained 3 c. flour 2 tsp. baking powder 3/4 tsp. nutmeg 1 c. chopped nuts 1 c. raisins Mix thoroughly and pour into 2 well greased bread tins or 2 (1 pound) coffee cans. Bake at 350 degrees for 1 hour. Cool 10 minutes before removing bread from tins. |
