GRATIN DAUPHINOIS (GRATIN OF
POTATOES)
 
8 med. size potatoes
1/2 tsp. salt
1/4 tsp. white pepper
Pinch of nutmeg
1 c. scalded milk
1 c. light cream
1 egg, beaten
1/4 c. grated Swiss cheese

Peel potatoes and cut into slices approximately 1/4 inch thick. In a bowl, combine potatoes, salt, pepper, nutmeg, milk, cream, egg, and grated cheese. Turn mixture into a buttered baking dish. Dot with butter. Bake at 400 degrees for 1 hour, or until potatoes are tender and top is browned. Serves 4.
