OATMEAL RAISIN COOKIES 
1 c. butter (softened)
2 c. firmly packed brown sugar
2 eggs
3 tbsp. lemon juice
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
3 c. quick cooking rolled oats (old fashioned Quaker Oatmeal)
1 1/2 c. raisins
(1 c. chopped walnuts, optional)

In a large bowl mix butter and sugar until creamy. Beat in eggs and lemon juice. In another bowl stir together flour, salt and baking soda. Gradually add to butter mixture. Add oats, raisins (walnuts) and stir until combined.

Drop dough in rounded tbsp. onto ungreased baking sheet 2 inches apart. Bake at 350 degrees 18-20 minutes until edges are golden brown. Cool on rack.
