DEVIL'S FOOD COOKIES 
1/2 c. hot water
1/2 c. pitted prunes
1 1/2 c. sugar
1/2 c. nonfat yogurt
1/4 c. Canola oil
2 egg whites, lightly beaten
1 1/2 c. flour, sifted
1 c. unsweetened cocoa powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. instant coffee granules

Heat oven to 350 degrees spray baking sheets with vegetable cooking spray.

In small bowl, soak prunes in 1/2 cup hot water for 10 to 15 minutes until plump and soft. Place prunes and the soaking liquid into blender, process until smooth. In medium bowl whisk together the prune puree, sugar, yogurt, oil and egg whites. In another bowl mix flour, cocoa, salt, soda and coffee. Using a wooden spoon mix dry ingredients into the wet mixture just until blended. Drop by tablespoons onto baking sheets 1 1/2 inches apart. Bake for 12 to 14 minutes or until tops spring back when lightly touched. Cool on wire racks.

Prunes are not noticeable here, they carry a deep chocolate flavor.

Yummmyyyyyu and so easy to make. Plus the texture is cakey not hard like cookies so definitely something different. Love the hint of prune flavour.
