LEMON POPPY SEED MUFFINS | |
1 c. plain yogurt 1 c. sugar 1/2 c. butter, melted 2 eggs 1 tsp. vanilla 1 tsp. lemon extract 1 tsp. lemon peel 2 c. flour 1/2 tsp. salt 1-3 tbsp. poppy seeds 1/4 tsp. baking soda 2 tsp. baking powder Cream together sugar and butter. Add eggs, vanilla, lemon extract and lemon peel. In separate bowl, combine last five ingredients and add to egg mixture alternately with the 1 cup plain yogurt. Fill 18 greased muffin cups. Bake at 375 degrees for 20 minutes. |
