STUFFED PORK CHOPS 
4 pork chops with pocket
1 (10 oz.) can mandarin oranges
1 c. pkg. stuffing
1/3 c. chopped onion
1/4 c. seedless raisins
1/2 tsp. salt
1/4 tsp. pepper
1/4-1/2 c. orange juice

Drain oranges, save juice. Mix oranges with stuffing, raisins, salt, pepper, onion and 1/4 cup juice. Stuff chops. Fasten chops with toothpicks. Place in shallow pan. Pour remaining juice to 1/4" depth of pan. Bake, covered 350 degrees for 1 1/2 hours. Uncover, baste and continue to bake for 20 to 25 minutes.
