FAST AND EASY RHUBARB CAKE | |
1. 1 1/2 c. sugar 2. 1/2 c. Crisco 3. 1 egg 4. 1 c. buttermilk 5. 2 c. flour 6. 1 tsp. baking soda 7. 1/2 tsp. salt 8. 1 tsp. vanilla 1 1/2 c. diced rhubarb 1/2 c. chopped nuts TOPPING: 1/4 c. sugar 1/2 tsp. cinnamon Cream together first 8 ingredients. Fold in rhubarb and nuts. Pour into 9 x 13 inch pan. Sprinkle with sugar-cinnamon mixture. Bake at 350 degrees for 45 minutes. In place of buttermilk, add 1 tablespoon of vinegar to 1 cup milk - let stand 5 minutes. C/R |
