CREAMY WILD RICE SOUP | |
1/2 c. chopped onion 4 tbsp. butter 5 tbsp. flour 3 c. chicken broth 2 c. Half and Half cream 1/2 c. slivered almonds 2 c. cooked wild rice Salt and pepper to taste Saute onion in butter until soft. Add flour and bring to a boil again, stir until smooth. Add chicken broth and bring to a boil, reduce heat and simmer for 10-15 minutes. Heat Half and half (do not boil). Add to soup mixture and stir. Add almonds and cooked wild rice, salt and pepper. Simmer 20 minutes. Serve very warm. (Will be thick). Turkey broth with small pieces of turkey in place of chicken broth is good. Serves 4-5. |
