CARROT CAKE 
2 c. sugar
1 1/2 c. oil
4 eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 sm. jars of baby food, strained carrots
1 c. chopped nuts

Cream sugar, oil and eggs. Add flour, cinnamon, baking soda and salt. Add baby food and nuts. Pour into an ungreased 9 x 13 inch pan. Bake at 300 degrees for 1 1/4 hours. Frost with Cream Cheese Frosting (below). The baby food makes this cake really moist and gives it a great flavor. Much easier than grating carrots!

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1 box powdered sugar
1 stick butter
2 tsp. vanilla

Mix softened cream cheese, butter and vanilla. Add powdered sugar slowly until mixed well.
